Ingredients
  

  • 6 cups Rice Krispies cereal
  • 10 ounces about 40 large marshmallows OR 5 cups mini marshmallows
  • 4 tablespoons 1/2 stick unsalted butter
  • 1 cup chocolate chips milk, dark, or semi-sweet

Instructions
 

  • Prepare the Pan: Grease a 9x13 inch pan with butter or line it with parchment paper. Parchment paper is highly recommended to avoid sticking.
  • Melt the Butter: In a large saucepan, melt the butter over low heat.
  • Add Marshmallows: Add the marshmallows to the melted butter and stir until completely melted and smooth. Remove from heat.
  • Melt the Chocolate: In a heat-safe bowl set over a pan of simmering water (double boiler method) or in the microwave in 30-second intervals, melt the chocolate chips, stirring until smooth. Be careful not to overheat.
  • Combine Cereal and Chocolate: Pour the melted chocolate directly over the rice krispies in a large bowl. Gently fold until the cereal is evenly coated.
  • Add to Marshmallow Mixture: Pour the melted marshmallow mixture over the chocolate covered rice krispies. Gently fold until the cereal is evenly coated.
  • Press into Pan: Transfer the mixture to the prepared pan and gently press down to create an even layer.
  • Set and Cut: Let the cakes set for at least 30 minutes before cutting into squares.

Notes

  • For easier melting, use mini marshmallows.
  • Don't overheat the chocolate, or it will seize. Melt slowly and stir frequently.
  • For a richer flavor, use dark chocolate.
  • Add a pinch of sea salt to the melted marshmallow mixture to enhance the sweetness.
  • Mix-ins like chopped nuts, dried fruit, or sprinkles can be added for extra flavor and texture.
  • Vegan adaptation: Can be made vegan by replacing butter with vegan butter, marshmallows with vegan marshmallows (Dandies brand is popular), and using vegan chocolate chips.
