Ingredients:

  • 8 oz goat cheese, softened
  • 4 oz cream cheese, softened
  • 2 tbsp Greek yogurt
  • 1 tsp lemon juice
  • 1/2 tsp lemon zest
  • 3 tbsp honey
  • 1 pinch flaky sea salt
  • 1 sprig fresh thyme, minced

Instructions:

  1. Place the softened goat cheese and cream cheese in a mixing bowl.
  2. Use a spatula to mash them together until they form a rough, combined paste. Note: This prevents the mixer from splattering.
  3. Using a hand mixer on medium high speed, beat the cheese mixture for 2-3 mins until the texture is light and airy.
  4. Add the Greek yogurt and lemon juice during the final 30 seconds of whipping until the mixture looks glossy.
  5. Transfer the whipped cheese to a shallow bowl.
  6. Use the back of a spoon to create a swirling well in the center. Note: This creates pools for the honey to sit in.
  7. Warm the honey in the microwave for 10 seconds until it flows easily.
  8. Drizzle the honey into the swirls.
  9. Garnish with lemon zest, sea salt, and minced fresh thyme.
