Ingredients:
- 8 oz goat cheese, softened
- 4 oz cream cheese, softened
- 2 tbsp Greek yogurt
- 1 tsp lemon juice
- 1/2 tsp lemon zest
- 3 tbsp honey
- 1 pinch flaky sea salt
- 1 sprig fresh thyme, minced
Instructions:
- Place the softened goat cheese and cream cheese in a mixing bowl.
- Use a spatula to mash them together until they form a rough, combined paste. Note: This prevents the mixer from splattering.
- Using a hand mixer on medium high speed, beat the cheese mixture for 2-3 mins until the texture is light and airy.
- Add the Greek yogurt and lemon juice during the final 30 seconds of whipping until the mixture looks glossy.
- Transfer the whipped cheese to a shallow bowl.
- Use the back of a spoon to create a swirling well in the center. Note: This creates pools for the honey to sit in.
- Warm the honey in the microwave for 10 seconds until it flows easily.
- Drizzle the honey into the swirls.
- Garnish with lemon zest, sea salt, and minced fresh thyme.
