Ingredients:
- 8 oz (225g) soft goat cheese, room temperature
- 1/4 cup (60g) plain non-fat Greek yogurt
- 1 tbsp (15ml) honey or maple syrup
- 1 tsp (5ml) fresh lemon juice
- 1/2 tsp (2g) lemon zest
- 1 pinch (0.5g) sea salt
- 4 oz (113g) prosciutto, thinly sliced
- 1 cup (150g) raw almonds or walnut halves
- 1 cup (150g) fresh blueberries
- 1 cup (150g) sliced English cucumber
- 1/2 cup (75g) pomegranate seeds
- 2 tbsp (30ml) extra virgin olive oil
- 1 sprig (2g) fresh thyme or rosemary
Instructions:
- Place the room-temperature goat cheese, Greek yogurt, honey, and lemon juice into the food processor.
- Pulse on high for 60–90 seconds until the mixture is smooth and holds soft peaks.
- Fold in the lemon zest and sea salt by hand using a spatula.
- Transfer the spread to a small bowl and chill in the refrigerator for 30 minutes to firm up.
- Roll the prosciutto slices into loose ribbons or roses.
- Slice the English cucumber into thick rounds.
- Wash and pat dry the blueberries and pomegranate seeds.
- Place the chilled whipped goat cheese in a shallow bowl in the center of the board and create a swirl in the top.
- Arrange the prosciutto and cucumber slices in radiating patterns around the bowl.
- Fill the remaining gaps with almonds, blueberries, and pomegranate seeds.
- Drizzle olive oil over the nuts and garnish with a sprig of fresh thyme or rosemary.
