Ingredients:
- 75 fl oz (50 ml) Vanilla Vodka
- 5 fl oz (15 ml) Passion Fruit Liqueur (Passoã recommended)
- 5 fl oz (15 ml) Fresh Lime Juice
- 5 fl oz (15 ml) Vanilla Syrup
- Pulp of 1.5 Fresh Passion Fruit
- 2 fl oz (60 ml) Prosecco (Chilled, dry/brut)
- Half a Fresh Passion Fruit (for garnish)
- Ice (Large, clean cubes)
Instructions:
- Chill Glassware: Place the martini glass in the freezer or fill it with ice water while preparing the cocktail. This is a non-negotiable step for a brilliant serve.
- Prepare Fruit: Halve the passion fruits. Scoop the pulp from 1.5 fruits directly into the cocktail shaker. Reserve the other half for garnish.
- Combine Ingredients: Add the vanilla vodka, passion fruit liqueur, fresh lime juice, and vanilla syrup to the shaker containing the passion fruit pulp.
- Add Ice: Fill the shaker two-thirds full with fresh, large ice cubes.
- Shake Vigorously (The 'Hard Shake'): Seal the shaker tightly and shake hard for 15–20 seconds. The exterior of the shaker should be thoroughly frosted. This rapid shaking ensures perfect chilling and dilution.
- Double Strain: Empty the ice/water from the chilled martini glass. Place the fine mesh sieve over the glass and strain the cocktail, ensuring the passion fruit seeds and excess ice shards are removed.
- Garnish: Float the remaining half passion fruit in the centre of the cocktail (cut side up).
- The Serve: Pour the 60 ml (2 fl oz) of chilled Prosecco into the separate shot glass. Serve the Martini immediately alongside the shot of Prosecco.
