Ingredients:

  • 75 fl oz (50 ml) Vanilla Vodka
  • 5 fl oz (15 ml) Passion Fruit Liqueur (Passoã recommended)
  • 5 fl oz (15 ml) Fresh Lime Juice
  • 5 fl oz (15 ml) Vanilla Syrup
  • Pulp of 1.5 Fresh Passion Fruit
  • 2 fl oz (60 ml) Prosecco (Chilled, dry/brut)
  • Half a Fresh Passion Fruit (for garnish)
  • Ice (Large, clean cubes)

Instructions:

  1. Chill Glassware: Place the martini glass in the freezer or fill it with ice water while preparing the cocktail. This is a non-negotiable step for a brilliant serve.
  2. Prepare Fruit: Halve the passion fruits. Scoop the pulp from 1.5 fruits directly into the cocktail shaker. Reserve the other half for garnish.
  3. Combine Ingredients: Add the vanilla vodka, passion fruit liqueur, fresh lime juice, and vanilla syrup to the shaker containing the passion fruit pulp.
  4. Add Ice: Fill the shaker two-thirds full with fresh, large ice cubes.
  5. Shake Vigorously (The 'Hard Shake'): Seal the shaker tightly and shake hard for 15–20 seconds. The exterior of the shaker should be thoroughly frosted. This rapid shaking ensures perfect chilling and dilution.
  6. Double Strain: Empty the ice/water from the chilled martini glass. Place the fine mesh sieve over the glass and strain the cocktail, ensuring the passion fruit seeds and excess ice shards are removed.
  7. Garnish: Float the remaining half passion fruit in the centre of the cocktail (cut side up).
  8. The Serve: Pour the 60 ml (2 fl oz) of chilled Prosecco into the separate shot glass. Serve the Martini immediately alongside the shot of Prosecco.
