Ingredients:

  • 2 cups (300g) cherry tomatoes, halved
  • 1 cup (150g) English cucumber, diced
  • 1/4 cup (40g) red onion, thinly sliced
  • 1/4 cup (15g) fresh basil leaves, torn
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 tsp (3g) dried oregano
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.2g) black pepper
  • 6 oz (170g) feta cheese, crumbled

Instructions:

  1. Halve the cherry tomatoes, dice the cucumber into bite-sized chunks, and slice the red onion into thin half-moons. Place all three in a large mixing bowl.
  2. In a small jar or bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Whisk vigorously until the mixture is emulsified and opaque.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Add the torn basil and crumbled feta. Use a folding motion to combine so the feta stays in creamy chunks.
