Ingredients:
- 2 cups (300g) cherry tomatoes, halved
- 1 cup (150g) English cucumber, diced
- 1/4 cup (40g) red onion, thinly sliced
- 1/4 cup (15g) fresh basil leaves, torn
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) balsamic vinegar
- 1 clove garlic, minced
- 1/2 tsp (3g) dried oregano
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.2g) black pepper
- 6 oz (170g) feta cheese, crumbled
Instructions:
- Halve the cherry tomatoes, dice the cucumber into bite-sized chunks, and slice the red onion into thin half-moons. Place all three in a large mixing bowl.
- In a small jar or bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Whisk vigorously until the mixture is emulsified and opaque.
- Pour the dressing over the vegetables and toss gently to coat.
- Add the torn basil and crumbled feta. Use a folding motion to combine so the feta stays in creamy chunks.
