Ingredients:

  • 1 large English Cucumber (approx. 1 lb / 450g)
  • 2 cups cherry tomatoes (300g)
  • 1/2 cup red onion, finely diced (75g)
  • 1/2 tsp kosher salt for sweating (3g)
  • 3 tbsp extra virgin olive oil (45ml)
  • 2 tbsp red wine vinegar (30ml)
  • 1 tsp dried oregano (2g)
  • 1/2 tsp salt (3g)
  • 1/4 tsp black pepper (1g)
  • 1/2 cup crumbled feta cheese (75g)
  • 2 tbsp chopped fresh parsley (8g)

Instructions:

  1. Dice the cucumber into bite-sized chunks and place them in a colander. Sprinkle with 1/2 tsp (3g) of kosher salt and toss gently. Let them sit for 10–15 minutes, then shake the colander gently to remove excess moisture.
  2. Halve the cherry tomatoes and finely dice the red onion. Combine the drained cucumbers, tomatoes, and onion in a large mixing bowl.
  3. In a small jar or bowl, combine olive oil, red wine vinegar, dried oregano, salt, and pepper. Shake or whisk until the mixture is emulsified and slightly thickened.
  4. Pour the dressing over the vegetables and toss gently to coat. Fold in the crumbled feta and chopped parsley last.
