Ingredients:

  • 1 lb 90% lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tbsp low-sodium taco seasoning
  • 1 cup low-sodium salsa
  • 1/2 cup plain non-fat Greek yogurt
  • 32 oz frozen tater tots
  • 2 cups shredded reduced-fat Mexican blend cheese
  • 1 tsp smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 2 tbsp pickled jalapeños

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add the lean ground beef, breaking it apart until browned.
  2. Add the diced onion and bell pepper to the skillet, sautéing until the vegetables soften and the beef is fragrant.
  3. Stir in the minced garlic and taco seasoning, cooking for another 60 seconds to bloom the spices.
  4. Lower the heat to medium-low. Stir in the salsa and Greek yogurt until the sauce is velvety and coats the meat evenly.
  5. Pour the beef mixture into the bottom of a 9x13 inch baking dish and smooth it with a spatula.
  6. Arrange the frozen tater tots in tight, neat rows across the top of the beef and sprinkle evenly with smoked paprika.
  7. Bake at 400°F (200°C) for 30 minutes.
  8. Remove from the oven, sprinkle the reduced-fat cheese over the top, and bake for an additional 5-10 minutes until the cheese is melted.
  9. Garnish with fresh cilantro, diced avocado, and pickled jalapeños before serving.
