Ingredients:
- 1 lb 90% lean ground beef
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 3 tbsp low-sodium taco seasoning
- 1 cup low-sodium salsa
- 1/2 cup plain non-fat Greek yogurt
- 32 oz frozen tater tots
- 2 cups shredded reduced-fat Mexican blend cheese
- 1 tsp smoked paprika
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 2 tbsp pickled jalapeños
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the lean ground beef, breaking it apart until browned.
- Add the diced onion and bell pepper to the skillet, sautéing until the vegetables soften and the beef is fragrant.
- Stir in the minced garlic and taco seasoning, cooking for another 60 seconds to bloom the spices.
- Lower the heat to medium-low. Stir in the salsa and Greek yogurt until the sauce is velvety and coats the meat evenly.
- Pour the beef mixture into the bottom of a 9x13 inch baking dish and smooth it with a spatula.
- Arrange the frozen tater tots in tight, neat rows across the top of the beef and sprinkle evenly with smoked paprika.
- Bake at 400°F (200°C) for 30 minutes.
- Remove from the oven, sprinkle the reduced-fat cheese over the top, and bake for an additional 5-10 minutes until the cheese is melted.
- Garnish with fresh cilantro, diced avocado, and pickled jalapeños before serving.
