Ingredients:

  • 1 lb lean ground beef
  • 3 tbsp taco seasoning
  • 1/2 cup water
  • 2 cups cooked Mexican-style rice
  • 1 cup refried beans
  • 1 1/2 cups shredded Monterey Jack or Colby Jack cheese
  • 1 cup crushed Fritos or corn chips
  • 4 large (10-inch) flour tortillas
  • 2 tbsp unsalted butter

Instructions:

  1. Brown the ground beef in a large non-stick skillet over medium-high heat, breaking the meat into very small crumbles.
  2. Stir in the taco seasoning and water; simmer until the liquid reduces to a thick glaze that clings to the meat.
  3. Heat the refried beans in a small saucepan over low heat until steaming and spreadable, and ensure the cooked rice is kept warm.
  4. Lay a flour tortilla flat and layer the ingredients in this order: a smear of refried beans, a scoop of rice, a portion of seasoned beef, a handful of shredded cheese, and a sprinkle of crushed Fritos.
  5. Fold in the sides of the tortilla and roll tightly.
  6. Melt butter in the skillet over medium heat. Place the burrito seam-side down and press lightly, cooking for 2 minutes per side until golden-brown and the cheese is molten.
