Ingredients:

  • 1 lb fresh strawberries, hulled and quartered
  • 1 cup granulated white sugar
  • 1/4 cup filtered water
  • 3/4 cup fresh lime juice
  • 1/8 tsp sea salt
  • 1 tsp lime zest

Instructions:

  1. Place strawberries and sugar in a small saucepan. Let sit for 5 minutes at room temperature to allow for osmotic maceration until berries are glossy.
  2. Add 1/4 cup filtered water to the saucepan. Place over medium heat and bring to a gentle simmer.
  3. Simmer for 5 minutes, stirring occasionally, until the strawberries are softened and the liquid has thickened into a syrup.
  4. Remove from heat. Use an immersion blender to process the mixture until completely smooth.
  5. Pass the mixture through a fine-mesh strainer into a bowl to remove seeds. Stir in the fresh lime juice, sea salt, and optional lime zest.
  6. Transfer the mix to a glass bottle or jar and refrigerate until thoroughly chilled before using in cocktails.
