Ingredients:
- 1 lb fresh strawberries, hulled and quartered
- 1 cup granulated white sugar
- 1/4 cup filtered water
- 3/4 cup fresh lime juice
- 1/8 tsp sea salt
- 1 tsp lime zest
Instructions:
- Place strawberries and sugar in a small saucepan. Let sit for 5 minutes at room temperature to allow for osmotic maceration until berries are glossy.
- Add 1/4 cup filtered water to the saucepan. Place over medium heat and bring to a gentle simmer.
- Simmer for 5 minutes, stirring occasionally, until the strawberries are softened and the liquid has thickened into a syrup.
- Remove from heat. Use an immersion blender to process the mixture until completely smooth.
- Pass the mixture through a fine-mesh strainer into a bowl to remove seeds. Stir in the fresh lime juice, sea salt, and optional lime zest.
- Transfer the mix to a glass bottle or jar and refrigerate until thoroughly chilled before using in cocktails.
