Ingredients:
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup buttermilk
- 1 large egg, beaten
- 2 tbsp unsalted butter, melted
- 1/2 cup yellow onion, finely grated or minced
- 2 cups neutral oil
Instructions:
- Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- Stir in the buttermilk, beaten egg, and melted butter until just combined, then fold in the grated onion. Do not overmix.
- Heat neutral oil in a cast iron skillet or deep fryer to 365°F (185°C).
- Using a small scoop or two spoons, drop rounded tablespoons of batter into the hot oil, working in batches to avoid crowding.
- Fry for 2–3 minutes, turning occasionally, until the puppies reach a deep mahogany-colored hue.
- Remove with a slotted spoon and place on a wire cooling rack. Sprinkle with a pinch of salt immediately.
