Ingredients:
- 1 cup (120g) All-purpose flour
- 1/2 cup (115g) Unsalted butter, softened to room temperature
- 1/4 cup (30g) Powdered sugar
- 1/2 cup (60g) Walnuts, finely chopped/ground
- 1/4 tsp (1.5g) Salt
- 1/2 tsp (2.5ml) Vanilla extract
- 1/2 cup (60g) Powdered sugar, sifted
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour and salt.
- Stir in the finely chopped walnuts, ensuring they are evenly distributed.
- In a large bowl, beat the softened butter and 1/4 cup of powdered sugar until pale and creamy.
- Stir in the vanilla extract.
- Gradually add the flour-walnut mixture, mixing on low speed or by hand until a soft dough forms; stop immediately once flour disappears.
- Scoop about 1 tablespoon of dough and roll into 1-inch balls.
- Place balls on the baking sheet about 2 inches apart.
- Bake for 15–18 minutes until edges are barely golden.
- Remove from oven and let cool on the pan for exactly 5 minutes.
- While still warm, roll each cookie in the sifted powdered sugar.
- Transfer to a wire rack to cool completely.
- Once cold, roll the cookies in powdered sugar a second time.
