Instructions:

  1. Zest one medium lemon directly into a glass mason jar to capture the essential oils.
  2. Squeeze the lemon juice into the jar, ensuring no seeds enter the container.
  3. Add the honey, salt, pepper, garlic powder, and dried oregano to the jar.
  4. Pour in the olive oil.
  5. Secure the lid tightly and shake vigorously for 30–60 seconds until the mixture transforms into a cohesive, opaque, and pale yellow liquid.
  6. Taste the dressing using a leaf of the salad you plan to serve; add one extra tablespoon of olive oil if too sharp, or a pinch more salt if the flavor is flat.
