Ingredients:

  • 6 cups mixed baby greens
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup toasted pecan nuts, roughly chopped
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 1/4 tsp fine sea salt
  • 1/8 tsp freshly cracked black pepper

Instructions:

  1. Wash the mixed greens thoroughly and use a salad spinner to remove all excess water until the leaves are completely dry to the touch. Place the dried greens in a large mixing bowl.
  2. Combine the olive oil, lemon juice, honey, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and thickened into an emulsion.
  3. Drizzle the dressing over the greens just before serving. Use hands or tongs to gently lift and turn the leaves until evenly coated.
  4. Fold in the shaved parmesan and toasted pecans last to maintain their texture.
