Ingredients:
- 6 cups mixed baby greens
- 1/4 cup shaved Parmesan cheese
- 1/4 cup toasted pecan nuts, roughly chopped
- 3 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp honey
- 1/4 tsp fine sea salt
- 1/8 tsp freshly cracked black pepper
Instructions:
- Wash the mixed greens thoroughly and use a salad spinner to remove all excess water until the leaves are completely dry to the touch. Place the dried greens in a large mixing bowl.
- Combine the olive oil, lemon juice, honey, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and thickened into an emulsion.
- Drizzle the dressing over the greens just before serving. Use hands or tongs to gently lift and turn the leaves until evenly coated.
- Fold in the shaved parmesan and toasted pecans last to maintain their texture.
