Ingredients:

  • 6 oz Genoa Salami, sliced 1/8 inch thick (approx. 28 slices)
  • 4 oz Manchego cheese, sliced into 1-inch squares
  • 2 tbsp hot honey
  • 1 tsp fresh thyme leaves
  • 24 small cornichon slices

Instructions:

  1. Place your skillet over medium heat for about 3 minutes. Cook until the pan whisps a tiny bit of smoke.
  2. Arrange the salami slices in the pan, leaving space between them. Cook 2 minutes until the edges begin to brown and curl upward.
  3. Flip the salami over. As the second side hits the heat, the meat will naturally form a small bowl shape.
  4. Place one square of Manchego into the center of each salami cup.
  5. Place a lid over the pan for about 60 seconds. Bake 1 minute until the cheese is slumped and velvety.
  6. Remove the lid and sprinkle the fresh thyme leaves over the molten cheese. Cook 30 seconds until the thyme smells fragrant and earthy.
  7. Carefully remove the pieces from the pan and place them on your serving board.
  8. Drizzle the 2 tbsp of hot honey over the top and press a cornichon slice into the center of each cheese square.
