Ingredients:
- 2 tbsp unsalted butter
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 lbs russet potatoes, peeled and cut into 1-inch cubes
- 4 cups low-sodium vegetable broth
- 1 tsp salt
- ½ tsp black pepper
- 1 cup plain Greek yogurt, room temperature
- 1 tbsp lemon juice
Instructions:
- Melt the butter over medium heat. Add the diced onion and sauté until translucent (about 4–5 minutes). Stir in the minced garlic and cook for 60 seconds until fragrant.
- Add the cubed potatoes and vegetable broth. Increase heat to high and bring to a rolling boil. Once boiling, reduce heat to medium-high and simmer uncovered for 12–15 minutes until potatoes are fork-tender.
- Remove the pot from the heat. Use an immersion blender to puree the soup until completely smooth. Slowly stir in the room-temperature Greek yogurt and lemon juice until the texture is velvety.
- Taste and add salt and pepper to finalize seasoning.
