Ingredients:

  • 1/4 cup heavy cream (chilled, 35% fat minimum)
  • 2 Tbsp whole milk (chilled)
  • 1 tsp powdered sugar (icing sugar)
  • 1/4 tsp vanilla extract
  • 1 cup cold brew or espresso (for serving)
  • Ice cubes (as needed for serving)

Instructions:

  1. Ensure both the heavy cream and whole milk are straight from the refrigerator. Chilling is essential for stable foam.
  2. Combine the powdered sugar and vanilla extract in a small bowl, jar, or dedicated milk frother container.
  3. Add the chilled heavy cream and milk to the sugar/vanilla mixture. Give the mixture a very gentle stir to begin dissolving the sugar.
  4. Froth the mixture using an electric handheld whisk or milk frother. Insert the frother head just beneath the surface. Whisk constantly for 30–60 seconds, stopping when the liquid has roughly doubled in volume and is thick but still pourable (like thin shaving foam). Avoid over-whisking into stiff whipped cream.
  5. Assemble the drink: Fill a tall glass with ice. Pour in your chilled coffee (cold brew or iced espresso).
  6. Very gently spoon or pour the prepared cold foam directly over the top of the beverage. Serve immediately.
