Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (125g) creamy peanut butter
- 1/2 cup (100g) brown sugar, packed
- 1 large egg yolk, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/4 cups (155g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.2g) baking soda
- 1/4 cup (60ml) seedless raspberry or strawberry jam
Instructions:
- In a large bowl, beat the softened butter and peanut butter together until smooth.
- Mix in the brown sugar, egg yolk, and vanilla extract. Beat until the mixture looks fluffy and the sugar has mostly integrated.
- Sift in the flour, salt, and baking soda. Stir with a spatula until a soft dough forms, being careful not to overmix.
- Scoop about 1 tablespoon of dough and roll it into a 1-inch ball.
- Place the ball on a prepared baking sheet and gently press your thumb or the back of a rounded teaspoon into the center to create a well.
- Use a 1/2 teaspoon measure to fill each indent with jam, ensuring the filling does not overflow.
- Bake in a preheated oven at 350°F (175°C) for 10–12 minutes until edges are barely golden brown.
