Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (125g) creamy peanut butter
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg yolk, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/4 cups (155g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.2g) baking soda
  • 1/4 cup (60ml) seedless raspberry or strawberry jam

Instructions:

  1. In a large bowl, beat the softened butter and peanut butter together until smooth.
  2. Mix in the brown sugar, egg yolk, and vanilla extract. Beat until the mixture looks fluffy and the sugar has mostly integrated.
  3. Sift in the flour, salt, and baking soda. Stir with a spatula until a soft dough forms, being careful not to overmix.
  4. Scoop about 1 tablespoon of dough and roll it into a 1-inch ball.
  5. Place the ball on a prepared baking sheet and gently press your thumb or the back of a rounded teaspoon into the center to create a well.
  6. Use a 1/2 teaspoon measure to fill each indent with jam, ensuring the filling does not overflow.
  7. Bake in a preheated oven at 350°F (175°C) for 10–12 minutes until edges are barely golden brown.
