Ingredients:

  • 11 oz butterscotch chips
  • 0.5 cup creamy peanut butter
  • 5 oz crispy chow mein noodles
  • 0.25 tsp sea salt
  • 10 oz candy-coated chocolate eggs

Instructions:

  1. In a large microwave-safe glass bowl, combine the butterscotch chips and peanut butter. Microwave on 50% power in 30-second bursts, stirring vigorously between each interval until smooth.
  2. Add sea salt to the melted mixture, then gently fold in the chow mein noodles using a lift-and-fold motion until every strand is fully coated.
  3. Drop rounded tablespoons of the mixture onto a parchment-lined baking sheet. Use the back of a spoon to create a small indentation in the center of each mound.
  4. Place 2-3 candy-coated chocolate eggs into the center well of each nest. Allow the cookies to set at room temperature for 30 minutes until firm.
