Ingredients:
- 1.5 lbs zucchini, sliced into 1/2-inch rounds or sticks
- 2 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup Panko breadcrumbs
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- In a large mixing bowl, toss the sliced zucchini with olive oil, garlic powder, salt, and pepper until evenly coated.
- Sprinkle in the grated Parmesan cheese and Panko breadcrumbs, tossing gently until every piece has a light coating.
- Spread the zucchini in a single layer on the prepared sheet pan, ensuring they do not touch to prevent steaming.
- Bake for 12–15 minutes, then turn the broiler on for the final 2 minutes until the cheese is bubbling and golden brown.
