Ingredients:

  • 1.5 lbs zucchini, sliced into 1/2-inch rounds or sticks
  • 2 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. In a large mixing bowl, toss the sliced zucchini with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Sprinkle in the grated Parmesan cheese and Panko breadcrumbs, tossing gently until every piece has a light coating.
  4. Spread the zucchini in a single layer on the prepared sheet pan, ensuring they do not touch to prevent steaming.
  5. Bake for 12–15 minutes, then turn the broiler on for the final 2 minutes until the cheese is bubbling and golden brown.
