Ingredients:
- 1 lb ground pork sausage
- 2 cups all-purpose flour
- 1.5 cups sharp cheddar cheese, shredded
- 0.5 cup dry champagne or prosecco
- 1 tsp smoked paprika
- 2 lbs green seedless grapes
- 1 bottle prosecco or sparkling cider
- 0.5 cup granulated sugar
- 1 tbsp lemon juice
- 16 oz cream cheese, softened
- 1 cup red pepper jelly
- 0.5 cup green onions, thinly sliced
- 0.25 tsp garlic powder
Instructions:
- Wash and dry the grapes thoroughly. Submerge them in the Prosecco and lemon juice mixture; refrigerate for at least 4 hours to allow for osmotic infusion.
- Preheat your oven to 375°F (190°C) and line large sheet pans with parchment paper.
- In a stand mixer or large bowl, combine the ground sausage, shredded cheddar, flour, smoked paprika, and champagne. Mix until a cohesive dough forms.
- Scoop the sausage mixture into 1-inch balls (approximately 25g each) and place on the prepared baking sheets.
- Bake the sausage bites for 18–22 minutes until the internal temperature reaches 160°F and the exteriors are golden brown.
- While the bites bake, whip the softened cream cheese and garlic powder until fluffy. Spread onto a serving platter and top evenly with the red pepper jelly and sliced green onions.
- Drain the grapes from the liquid and roll them in granulated sugar until they appear frosted.
- Arrange the sausage bites, frosted grapes, and dip on a buffet line and serve immediately.
