Ingredients:

  • 1 lb ground pork sausage
  • 2 cups all-purpose flour
  • 1.5 cups sharp cheddar cheese, shredded
  • 0.5 cup dry champagne or prosecco
  • 1 tsp smoked paprika
  • 2 lbs green seedless grapes
  • 1 bottle prosecco or sparkling cider
  • 0.5 cup granulated sugar
  • 1 tbsp lemon juice
  • 16 oz cream cheese, softened
  • 1 cup red pepper jelly
  • 0.5 cup green onions, thinly sliced
  • 0.25 tsp garlic powder

Instructions:

  1. Wash and dry the grapes thoroughly. Submerge them in the Prosecco and lemon juice mixture; refrigerate for at least 4 hours to allow for osmotic infusion.
  2. Preheat your oven to 375°F (190°C) and line large sheet pans with parchment paper.
  3. In a stand mixer or large bowl, combine the ground sausage, shredded cheddar, flour, smoked paprika, and champagne. Mix until a cohesive dough forms.
  4. Scoop the sausage mixture into 1-inch balls (approximately 25g each) and place on the prepared baking sheets.
  5. Bake the sausage bites for 18–22 minutes until the internal temperature reaches 160°F and the exteriors are golden brown.
  6. While the bites bake, whip the softened cream cheese and garlic powder until fluffy. Spread onto a serving platter and top evenly with the red pepper jelly and sliced green onions.
  7. Drain the grapes from the liquid and roll them in granulated sugar until they appear frosted.
  8. Arrange the sausage bites, frosted grapes, and dip on a buffet line and serve immediately.
