Ingredients:

  • 1 package (3 oz) Strawberry or Raspberry Jell-O
  • 1 cup boiling water
  • 1/2 cup ice-cold water
  • 1.5 cups heavy whipping cream, chilled and divided
  • 1 tsp pure vanilla extract
  • 2 tbsp powdered sugar
  • 1/2 tsp clear almond extract
  • 1 tbsp edible gold stars or sprinkles
  • 6 fresh raspberries or strawberries
  • 6 small mint sprigs

Instructions:

  1. In a large heat-proof bowl, whisk the Jell-O powder into the boiling water for at least 2 minutes until every granule is dissolved. Stir in the cold water. Refrigerate for 15–20 minutes until the consistency resembles unbeaten egg whites.
  2. In a separate chilled bowl, whip 1 cup of heavy cream and vanilla extract until stiff peaks form. Gently fold the thickened gelatin into the whipped cream using a spatula until the color is uniform.
  3. Spoon or pipe the mousse into 6 glass cups, filling them 3/4 of the way. Refrigerate for at least 4 hours until the mousse is firm and springy.
  4. Whip the remaining 1/2 cup of cream with powdered sugar and almond extract until stiff. Pipe a swirl onto each cup and garnish with a fresh berry, mint sprig, and edible gold stars.
