Ingredients:

  • 2 cups (300g) diced cucumber
  • 1 cup (150g) diced tomatoes
  • 1/2 cup (75g) finely diced red onion
  • 2 tbsp (30ml) fresh lemon juice
  • 1/2 tsp (2g) roasted cumin powder
  • 1/4 tsp (1g) black salt
  • 1/8 tsp (0.5g) cayenne pepper
  • 1/4 cup (10g) chopped fresh cilantro
  • 1 tbsp (2g) finely chopped fresh mint

Instructions:

  1. Dice the cucumber, tomatoes, and onions into uniform 1/4-inch pieces, ensuring the tomato seeds are removed to prevent excess liquid. Place the diced vegetables into a large mixing bowl.
  2. In a small ramekin or directly over the vegetables, combine the fresh lemon juice, roasted cumin powder, salt, and cayenne pepper. Stir until the spices are fully suspended in the juice.
  3. Fold in the chopped cilantro and mint. Gently toss the vegetables with the dressing using a silicone spatula or large spoon until evenly coated.
