Ingredients:
- 2 cups (300g) diced cucumber
- 1 cup (150g) diced tomatoes
- 1/2 cup (75g) finely diced red onion
- 2 tbsp (30ml) fresh lemon juice
- 1/2 tsp (2g) roasted cumin powder
- 1/4 tsp (1g) black salt
- 1/8 tsp (0.5g) cayenne pepper
- 1/4 cup (10g) chopped fresh cilantro
- 1 tbsp (2g) finely chopped fresh mint
Instructions:
- Dice the cucumber, tomatoes, and onions into uniform 1/4-inch pieces, ensuring the tomato seeds are removed to prevent excess liquid. Place the diced vegetables into a large mixing bowl.
- In a small ramekin or directly over the vegetables, combine the fresh lemon juice, roasted cumin powder, salt, and cayenne pepper. Stir until the spices are fully suspended in the juice.
- Fold in the chopped cilantro and mint. Gently toss the vegetables with the dressing using a silicone spatula or large spoon until evenly coated.
