Ingredients:

  • 1 cup granulated white sugar
  • 0.75 cup filtered water
  • 2 tbsp pure vanilla extract
  • 0.125 tsp sea salt
  • 12 oz chilled sparkling mineral water
  • 1 tbsp heavy cream
  • Ice cubes

Instructions:

  1. Combine the granulated sugar, filtered water, and sea salt in a small heavy-bottomed saucepan.
  2. Bring the mixture to a simmer over medium heat, whisking constantly until the sugar is fully dissolved and the liquid is clear.
  3. Remove the saucepan from the heat immediately and stir in the pure vanilla extract to preserve the aromatic top notes.
  4. Transfer the syrup to a glass container and refrigerate until completely chilled.
  5. To assemble, fill a tall glass with ice and pour in 2 tablespoons of the chilled vanilla syrup.
  6. Slowly top with 12 oz of chilled sparkling mineral water and stir gently with a long-handled spoon.
  7. Optional: Pour 1 tablespoon of heavy cream over the top for a classic cream soda finish.
