Ingredients:
- 1 cup granulated white sugar
- 0.75 cup filtered water
- 2 tbsp pure vanilla extract
- 0.125 tsp sea salt
- 12 oz chilled sparkling mineral water
- 1 tbsp heavy cream
- Ice cubes
Instructions:
- Combine the granulated sugar, filtered water, and sea salt in a small heavy-bottomed saucepan.
- Bring the mixture to a simmer over medium heat, whisking constantly until the sugar is fully dissolved and the liquid is clear.
- Remove the saucepan from the heat immediately and stir in the pure vanilla extract to preserve the aromatic top notes.
- Transfer the syrup to a glass container and refrigerate until completely chilled.
- To assemble, fill a tall glass with ice and pour in 2 tablespoons of the chilled vanilla syrup.
- Slowly top with 12 oz of chilled sparkling mineral water and stir gently with a long-handled spoon.
- Optional: Pour 1 tablespoon of heavy cream over the top for a classic cream soda finish.
