Ingredients:
- 2 cups full-fat Greek yogurt (480g)
- 1 large English cucumber (about 1.5 lbs / 680g)
- 2-3 cloves garlic, minced very fine
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh mint, finely chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Wash and trim the cucumber. For English cucumbers, you can leave the skin on for extra fiber and color; for Persian cucumbers, skin is always fine. Grate the cucumber using the large holes of a box grater.
