Ingredients:

  • 3 cups (375g) All-purpose flour
  • 1 tsp Fine sea salt
  • 1 tbsp Granulated sugar
  • 6 tbsp (85g) Unsalted butter, chilled and cubed
  • 2 tbsp (28g) High-quality lard or vegetable shortening, chilled
  • 1 Large egg, beaten
  • 1/2 cup (120ml) Ice-cold water
  • 1 tsp White vinegar

Instructions:

  1. Whisk the flour, sea salt, and granulated sugar in your chilled bowl. Add the cubed butter and lard. Note: Using two fats gives you both flavor and a better melting point.
  2. Work the fats into the dry mix using your pastry cutter. Stop when the mixture looks like coarse sand but still has visible pea sized lumps of butter.
  3. In a small jar or bowl, whisk the egg, ice water, and vinegar until fully combined.
  4. Slowly drizzle the liquid over the flour while tossing with a fork. Watch for the dough to become shaggy and clump together.
  5. Transfer the mass to a floured surface and gently gather it into a ball. Do not over knead; you just want it to hold together.
  6. Flatten the ball into a disc, wrap it tightly in plastic, and let it rest in the fridge for exactly 60 minutes. Note: This allows the gluten to relax so the dough doesn't shrink.
  7. On a floured surface, roll the chilled dough out until it is about 3mm thick. The dough should feel supple and smooth.
  8. Use your round cutter to stamp out your discs. Re roll the scraps only once to avoid toughness. Once your discs are cut, you can stack them with pieces of parchment paper in between so they don't stick.
