Ingredients:

  • 3 lbs butternut squash, peeled and cubed into 1-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Peel the butternut squash and cut into uniform 1-inch cubes.
  3. In a large mixing bowl, toss squash cubes with olive oil until evenly coated.
  4. Add salt, black pepper, garlic powder, and smoked paprika to the bowl and toss again until the spices form a thin coating.
  5. Spread the cubes onto the prepared baking sheet in a single layer, ensuring pieces do not touch to allow for airflow.
  6. Roast for 20 minutes, remove from oven, and flip the cubes with a spatula.
  7. Return to the oven for another 15–20 minutes until edges are deeply browned and centers are velvety.
