Ingredients:
- 3 lbs butternut squash, peeled and cubed into 1-inch pieces
- 2 tbsp extra virgin olive oil
- 1/2 tsp fine sea salt
- 1/4 tsp cracked black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Peel the butternut squash and cut into uniform 1-inch cubes.
- In a large mixing bowl, toss squash cubes with olive oil until evenly coated.
- Add salt, black pepper, garlic powder, and smoked paprika to the bowl and toss again until the spices form a thin coating.
- Spread the cubes onto the prepared baking sheet in a single layer, ensuring pieces do not touch to allow for airflow.
- Roast for 20 minutes, remove from oven, and flip the cubes with a spatula.
- Return to the oven for another 15–20 minutes until edges are deeply browned and centers are velvety.
