Ingredients:

  • 3 oz packet Flavoured Gelatin (Tropical or Strawberry)
  • 2 Tbsp Granulated Sugar (optional)
  • 1 cup Boiling Water
  • 1/2 cup Cold Fruit Juice (e.g., Pineapple or Orange)
  • 1 cup High-Quality Vodka (80 Proof)
  • 1 tsp Fresh Lime Juice (optional)
  • Fresh Lime Zest or Sprinkles, for garnish

Instructions:

  1. Arrange the shot cups neatly on a baking tray or large platter. This makes transport to the fridge easy.
  2. Bring 1 cup (240 ml) of water to a rolling boil in the saucepan.
  3. Empty the gelatin powder and the optional sugar into the heatproof mixing bowl.
  4. Pour the boiling water over the gelatin and whisk constantly for 2–3 minutes until all granules are completely dissolved and the mixture is clear.
  5. Whisk in the cold fruit juice and the optional lime juice. This drops the mixture’s temperature immediately.
  6. Let the mixture sit at room temperature for 5 minutes. The mixture must be warm (but not hot) to the touch, or the alcohol will evaporate/inhibit the setting process.
  7. Gently whisk in the 1 cup (240 ml) of chilled vodka. Whisk slowly to avoid creating too many air bubbles.
  8. Carefully pour the liquid mixture into the prepared shot cups. Use a small funnel or turkey baster for precision, filling each cup about three-quarters full.
  9. Transfer the tray of cups to the refrigerator. Ensure the surface is level so the shots set evenly. Chill for a minimum of 4 hours, but ideally 6–8 hours or overnight.
  10. Before serving, gently touch the surface of a shot. It should be firm, not sticky or wobbly.
  11. Add a tiny pinch of fresh zest or a few celebratory sprinkles just before serving.
