Ingredients:
- 2 lbs fresh peaches, sliced into 1/2-inch wedges
- 1 tbsp lemon juice
- 3 tbsp maple syrup
- 1.5 tbsp cornstarch
- 1 tsp vanilla extract
- 1 cup old-fashioned rolled oats
- 3/4 cup almond flour
- 1/2 cup pecans, roughly chopped
- 1/2 cup unsalted butter, cold and cubed
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
Instructions:
- Preheat your oven to 375°F (190°C). In a 9x9 inch baking dish, toss the sliced peaches with lemon juice, maple syrup, vanilla, and cornstarch until evenly coated.
- In a separate mixing bowl, combine the rolled oats, almond flour, chopped pecans, cinnamon, and sea salt.
- Add the cold, cubed butter to the dry mixture. Using a pastry cutter or large fork, work the butter into the oats until the mixture resembles coarse crumbs.
- Spread the crumble topping evenly over the peach filling.
- Bake for 40 minutes, or until the fruit is bubbling and the topping is deeply golden brown and crisp.
