Ingredients:

  • 2 lbs fresh peaches, sliced into 1/2-inch wedges
  • 1 tbsp lemon juice
  • 3 tbsp maple syrup
  • 1.5 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 3/4 cup almond flour
  • 1/2 cup pecans, roughly chopped
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt

Instructions:

  1. Preheat your oven to 375°F (190°C). In a 9x9 inch baking dish, toss the sliced peaches with lemon juice, maple syrup, vanilla, and cornstarch until evenly coated.
  2. In a separate mixing bowl, combine the rolled oats, almond flour, chopped pecans, cinnamon, and sea salt.
  3. Add the cold, cubed butter to the dry mixture. Using a pastry cutter or large fork, work the butter into the oats until the mixture resembles coarse crumbs.
  4. Spread the crumble topping evenly over the peach filling.
  5. Bake for 40 minutes, or until the fruit is bubbling and the topping is deeply golden brown and crisp.
