Ingredients:

  • 1 cup (150g) seedless green grapes
  • 1 cup (150g) blueberries
  • 1 cup (150g) strawberries, hulled and halved
  • 2 ripe figs, quartered
  • 1 tbsp (15ml) lemon juice
  • 8 oz (225g) sharp white cheddar, cubed into ½ inch pieces
  • 8 oz (225g) mozzarella pearls
  • 4 oz (115g) prosciutto, sliced into ribbons
  • 4 oz (115g) hard salami, thinly sliced and folded
  • ½ cup (60g) roasted almonds
  • 16 small pretzel sticks
  • 8 fresh mint leaves

Instructions:

  1. Wash all berries and grapes thoroughly. Slice the strawberries and figs. In a small bowl, gently toss the sliced fruit with lemon juice to maintain a bright, vibrant color.
  2. Cube the sharp white cheddar and fold the prosciutto and salami into ribbons or fans.
  3. Place the mozzarella pearls and cubed cheddar at the bottom of 8 clear 9oz cups to create a stable base.
  4. Fill the gaps around the cheese with blueberries and grapes, then gently tuck in the strawberry halves and fig quarters.
  5. Add a handful of roasted almonds to fill any remaining voids.
  6. Thread a piece of salami, a cube of cheese, and a grape onto a bamboo skewer and nestle it into the cup at an angle.
  7. Finish by adding a pretzel stick and a single sprig of mint to each cup.
