Ingredients:

  • 2 large (340g) ripe avocados, cubed
  • 1 cup (150g) English cucumber, diced
  • 1 cup (150g) cherry tomatoes, halved
  • 1/2 cup (75g) red onion, finely diced
  • 1/4 cup (15g) fresh cilantro, chopped
  • 1/4 cup (10g) fresh parsley, chopped
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (5ml) maple syrup
  • 1 clove (3g) garlic, minced
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. In a small jar or bowl, combine the olive oil, lime juice, maple syrup, minced garlic, salt, and pepper. Whisk vigorously for 60 seconds until the mixture looks opaque and creamy. Set aside to let the garlic infuse.
  2. Dice the cucumber, halve the tomatoes, and finely mince the red onion. Place these in a large glass bowl and add the chopped cilantro and parsley.
  3. Add the cubed avocado to the bowl. Immediately pour the dressing over the top.
  4. Using a silicone spatula, gently fold the ingredients from the bottom up until the avocado is coated, ensuring the cubes remain intact.
