Ingredients:

  • 4 cups (600g) fresh corn kernels
  • 1 cup (150g) cherry tomatoes, halved
  • ½ cup (75g) red onion, finely diced
  • ½ cup (30g) fresh cilantro, chopped
  • 1 jalapeno, seeded and minced
  • 1 large (150g) ripe avocado, cubed
  • ½ cup (75g) feta cheese, crumbled
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (5ml) honey
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper

Instructions:

  1. Dice the red onion, jalapeno, and tomatoes into uniform pieces. Cube the avocado last to prevent browning.
  2. Combine the olive oil, lime juice, honey, salt, and pepper in a mason jar. Shake vigorously for 30 seconds until the mixture is thickened and glossy.
  3. Place the corn, tomatoes, onion, and jalapeno in a large bowl. Pour the dressing over the top and toss gently.
  4. Gently fold in the cubed avocado and crumbled feta cheese to ensure they maintain their shape.
