Ingredients:

  • 1.5 lb fresh green beans, trimmed and halved
  • 1 tsp salt
  • 10.5 oz cream of mushroom soup
  • 0.5 cup whole milk
  • 1 tsp soy sauce
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1.5 cups crispy fried onions
  • 0.5 cup shredded sharp cheddar cheese

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9x13 inch baking dish to prevent the sauce from sticking to the corners.
  2. Bring a large pot of water to a boil and add the salt. Drop in the fresh green beans and boil for 5 minutes until vibrant green and slightly softened.
  3. Immediately drain the beans and plunge them into a bowl of ice water. Note: This shocks the beans, locking in the color and preventing mushiness.
  4. In your large mixing bowl, whisk the cream of mushroom soup, whole milk, soy sauce, black pepper, and garlic powder. Whisk until the mixture is velvety and smooth.
  5. Drain the beans from the ice water and pat them very dry with a kitchen towel. Fold the beans and 0.5 cup of the crispy fried onions into the sauce mixture.
  6. Transfer the mixture into the prepared baking dish, spreading it out into an even layer.
  7. Bake for 15 minutes until the sauce is bubbling around the edges.
  8. Remove the dish from the oven. Evenly sprinkle the remaining 1 cup of crispy fried onions and the shredded cheddar cheese over the top.
  9. Return to the oven and bake for an additional 10 minutes until the cheese is melted and the onions are golden brown and crackling.
  10. Let the casserole sit for 5 minutes before serving. Note: This allows the sauce to set so it isn't runny when you scoop it.
