Ingredients:
- 1.5 lb fresh green beans, trimmed and halved
- 1 tsp salt
- 10.5 oz cream of mushroom soup
- 0.5 cup whole milk
- 1 tsp soy sauce
- 0.5 tsp black pepper
- 0.5 tsp garlic powder
- 1.5 cups crispy fried onions
- 0.5 cup shredded sharp cheddar cheese
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease your 9x13 inch baking dish to prevent the sauce from sticking to the corners.
- Bring a large pot of water to a boil and add the salt. Drop in the fresh green beans and boil for 5 minutes until vibrant green and slightly softened.
- Immediately drain the beans and plunge them into a bowl of ice water. Note: This shocks the beans, locking in the color and preventing mushiness.
- In your large mixing bowl, whisk the cream of mushroom soup, whole milk, soy sauce, black pepper, and garlic powder. Whisk until the mixture is velvety and smooth.
- Drain the beans from the ice water and pat them very dry with a kitchen towel. Fold the beans and 0.5 cup of the crispy fried onions into the sauce mixture.
- Transfer the mixture into the prepared baking dish, spreading it out into an even layer.
- Bake for 15 minutes until the sauce is bubbling around the edges.
- Remove the dish from the oven. Evenly sprinkle the remaining 1 cup of crispy fried onions and the shredded cheddar cheese over the top.
- Return to the oven and bake for an additional 10 minutes until the cheese is melted and the onions are golden brown and crackling.
- Let the casserole sit for 5 minutes before serving. Note: This allows the sauce to set so it isn't runny when you scoop it.
