Ingredients:

  • 1 lb fresh strawberries, hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 2 tbsp honey
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest, finely grated
  • 1 tbsp fresh mint leaves, chiffonade

Instructions:

  1. Rinse all berries under cold water in a colander and gently pat them dry with a paper towel to prevent the dressing from being diluted.
  2. Hull the strawberries and cut them into uniform quarters, then place all strawberries, blueberries, raspberries, and blackberries in a large glass mixing bowl.
  3. In a small ramekin, whisk together the honey, lime juice, and lime zest until the mixture is smooth and glossy.
  4. Stir the sliced mint leaves into the dressing.
  5. Drizzle the dressing over the berries and gently fold the fruit from the bottom up using a rubber spatula until the berries are lightly glazed.
