Ingredients:
- 2 lbs fresh figs, stems removed and quartered
- 1.5 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1 cinnamon stick
Instructions:
- Place the quartered figs, sugar, lemon juice, and cinnamon stick in a heavy-bottomed pot. Stir gently to ensure the figs are well-coated in sugar and let the mixture sit for 10 minutes to draw out natural juices.
- Place the pot over medium heat until the mixture begins to bubble, then reduce heat to low-medium.
- Simmer for 20–25 minutes, stirring frequently to prevent sticking. Lightly mash some figs against the side of the pot if a smoother texture is desired.
- Perform the set test: the jam is ready when it is glossy and thick, and a spoon leaves a clear path on the bottom of the pot that does not immediately refill.
- Remove the cinnamon stick and transfer the jam into sterilized glass jars.
