Ingredients:

  • 2 lbs fresh figs, stems removed and quartered
  • 1.5 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 cinnamon stick

Instructions:

  1. Place the quartered figs, sugar, lemon juice, and cinnamon stick in a heavy-bottomed pot. Stir gently to ensure the figs are well-coated in sugar and let the mixture sit for 10 minutes to draw out natural juices.
  2. Place the pot over medium heat until the mixture begins to bubble, then reduce heat to low-medium.
  3. Simmer for 20–25 minutes, stirring frequently to prevent sticking. Lightly mash some figs against the side of the pot if a smoother texture is desired.
  4. Perform the set test: the jam is ready when it is glossy and thick, and a spoon leaves a clear path on the bottom of the pot that does not immediately refill.
  5. Remove the cinnamon stick and transfer the jam into sterilized glass jars.
