Instructions:
- Combine the apple cider vinegar, dijon mustard, honey, salt, pepper, minced garlic, and dried oregano in a glass mason jar or mixing bowl. Stir or shake briefly to ensure the mustard and honey are well integrated.
- Slowly pour in the olive oil. If using a jar, secure the lid and shake vigorously for 30 seconds. If using a bowl, whisk the oil in a slow, steady stream until the texture is velvety and unified.
- Taste the dressing with a salad leaf. Adjust the balance by adding an extra teaspoon of honey if too sharp, or a squeeze of fresh lemon if it feels too heavy.
