Ingredients:

  • 16 oz (450g) Frozen sweet peas, thawed and patted dry
  • 1 cup (115g) Sharp cheddar cheese, cubed small
  • 1/2 cup (60g) Red onion, finely diced
  • 6 slices (150g) Thick-cut bacon, cooked until crispy and crumbled
  • 1/2 cup (10g) Fresh parsley, finely chopped
  • 1/2 cup (115g) Real mayonnaise
  • 1/4 cup (60g) Sour cream or plain Greek yogurt
  • 1 tbsp (15ml) Apple cider vinegar
  • 1 tsp (4g) Granulated sugar
  • 1/2 tsp (2g) Garlic powder
  • 1/2 tsp (2g) Salt
  • 1/4 tsp (1g) Freshly cracked black pepper

Instructions:

  1. Thaw peas completely and spread them on paper towels. Pat them bone-dry to ensure the dressing adheres properly.
  2. In a small mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, salt, and black pepper until the dressing is glossy and smooth.
  3. In a large mixing bowl, combine the dried peas, cubed cheddar cheese, diced red onion, and half of the crumbled bacon.
  4. Pour the dressing over the salad base and use a rubber spatula to gently fold until all ingredients are evenly coated.
  5. Cover and refrigerate for at least 60 minutes to allow flavors to meld. Garnish with the remaining bacon and fresh parsley before serving.
