Ingredients:
- 16 oz (450g) Frozen sweet peas, thawed and patted dry
- 1 cup (115g) Sharp cheddar cheese, cubed small
- 1/2 cup (60g) Red onion, finely diced
- 6 slices (150g) Thick-cut bacon, cooked until crispy and crumbled
- 1/2 cup (10g) Fresh parsley, finely chopped
- 1/2 cup (115g) Real mayonnaise
- 1/4 cup (60g) Sour cream or plain Greek yogurt
- 1 tbsp (15ml) Apple cider vinegar
- 1 tsp (4g) Granulated sugar
- 1/2 tsp (2g) Garlic powder
- 1/2 tsp (2g) Salt
- 1/4 tsp (1g) Freshly cracked black pepper
Instructions:
- Thaw peas completely and spread them on paper towels. Pat them bone-dry to ensure the dressing adheres properly.
- In a small mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, salt, and black pepper until the dressing is glossy and smooth.
- In a large mixing bowl, combine the dried peas, cubed cheddar cheese, diced red onion, and half of the crumbled bacon.
- Pour the dressing over the salad base and use a rubber spatula to gently fold until all ingredients are evenly coated.
- Cover and refrigerate for at least 60 minutes to allow flavors to meld. Garnish with the remaining bacon and fresh parsley before serving.
