Ingredients:

  • 3 large overripe bananas (approx. 1 1/2 cups mashed)
  • 1/2 cup unsalted butter, melted and slightly cooled (113g)
  • 3/4 cup granulated sugar (150g)
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1/2 tsp kosher salt

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, peel the 3 bananas and mash with a fork until they reach a chunky-liquid consistency.
  3. Pour in the melted butter and whisk vigorously until the fat is fully incorporated into the fruit.
  4. Stir in the sugar, beaten egg, and vanilla extract until combined.
  5. Sift the flour, baking soda, and salt directly over the wet mixture. Use a spatula to fold the dry ingredients in gently, stopping the moment no more streaks of white flour are visible.
  6. Pour the batter into the prepared pan. Bake for 55 to 65 minutes. If browning too fast, tent loosely with foil at the 50-minute mark. The loaf is done when a toothpick inserted into the center comes out clean.
