Ingredients:
- 3 large overripe bananas (approx. 1 1/2 cups mashed)
- 1/2 cup unsalted butter, melted and slightly cooled (113g)
- 3/4 cup granulated sugar (150g)
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1/2 tsp kosher salt
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, peel the 3 bananas and mash with a fork until they reach a chunky-liquid consistency.
- Pour in the melted butter and whisk vigorously until the fat is fully incorporated into the fruit.
- Stir in the sugar, beaten egg, and vanilla extract until combined.
- Sift the flour, baking soda, and salt directly over the wet mixture. Use a spatula to fold the dry ingredients in gently, stopping the moment no more streaks of white flour are visible.
- Pour the batter into the prepared pan. Bake for 55 to 65 minutes. If browning too fast, tent loosely with foil at the 50-minute mark. The loaf is done when a toothpick inserted into the center comes out clean.
