Ingredients:
- 8 oz high-quality dark chocolate (60% cocoa solids or higher), chopped
- 1 tsp refined coconut oil
- 1 lb fresh strawberries, firm with green leaves attached
Instructions:
- Wipe 1 lb of strawberries with a clean, lint free cloth. Ensure strawberries are at room temperature for at least 30 minutes before dipping. Pat every single berry with a paper towel, focusing on the area near the leaves.
- Chop the 8 oz dark chocolate into uniform, pea sized pieces. Place the chopped chocolate and 1 tsp refined coconut oil into your deep bowl.
- Microwave on 50% power for 30 seconds, then stir thoroughly. Continue heating in 15 second intervals, stirring vigorously between each, until the residual heat creates a silky pool.
- Hold a strawberry by its green leaves and submerge it 3/4 of the way into the chocolate. Lift the berry, let the excess drip off, and give it a gentle twirl until the coating stops running.
- Place the berry on parchment paper and let it sit at room temperature for 15 minutes until the surface looks matte and firm.
