Ingredients:
- 1 lb English cucumber, thinly sliced
- 3 oz red onion, thinly sliced into half-moons
- 1/2 tsp kosher salt
- 3 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp honey
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Use a mandoline or knife to cut the cucumber into 1/8-inch rounds and the red onion into thin slivers.
- Place sliced cucumbers in a colander and sprinkle with 1/2 tsp salt. Let them sit for 15–20 minutes to draw out excess moisture.
- Briefly rinse the cucumbers under cold water to remove excess salt and pat them dry with a paper towel.
- In a small jar or bowl, combine the apple cider vinegar, olive oil, honey, salt, and pepper.
- Shake vigorously or whisk until the oil and vinegar have merged into a cohesive, slightly thickened liquid.
- Place the dried cucumbers and sliced red onions into a mixing bowl.
- Pour the dressing over the vegetables and toss gently until every slice is shimmering.
- Fold in the chopped parsley just before serving.
