Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 3 oz red onion, thinly sliced into half-moons
  • 1/2 tsp kosher salt
  • 3 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Use a mandoline or knife to cut the cucumber into 1/8-inch rounds and the red onion into thin slivers.
  2. Place sliced cucumbers in a colander and sprinkle with 1/2 tsp salt. Let them sit for 15–20 minutes to draw out excess moisture.
  3. Briefly rinse the cucumbers under cold water to remove excess salt and pat them dry with a paper towel.
  4. In a small jar or bowl, combine the apple cider vinegar, olive oil, honey, salt, and pepper.
  5. Shake vigorously or whisk until the oil and vinegar have merged into a cohesive, slightly thickened liquid.
  6. Place the dried cucumbers and sliced red onions into a mixing bowl.
  7. Pour the dressing over the vegetables and toss gently until every slice is shimmering.
  8. Fold in the chopped parsley just before serving.
