Ingredients:

  • 4 cups whole milk
  • 1 cinnamon stick
  • 1 strip lemon peel
  • 1 strip orange peel
  • 3/4 cup short-grain white rice
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions:

  1. Combine the whole milk, cinnamon stick, lemon peel, and orange peel in a heavy bottomed saucepan. Heat over medium until it just begins to simmer, then reduce heat to infuse the milk with aromatics.
  2. Stir in the short grain white rice and salt.
  3. Lower the heat to medium low and simmer gently. Stir every few minutes to prevent the rice from sticking for approximately 20-25 minutes until the rice is tender and the liquid has thickened.
  4. Whisk in the granulated sugar.
  5. Add the sweetened condensed milk.
  6. Stir in the vanilla extract.
  7. Stir continuously for another 5-10 minutes over low heat until the pudding reaches the nappe stage (coats the back of a spoon).
  8. Remove the cinnamon stick and citrus peels before serving.
