Ingredients:
- 16 oz (450g) rotini or fusilli pasta
- 1 lb (450g) cooked chilled shrimp, peeled and deveined
- 8 oz (225g) lump crabmeat
- 1/2 cup (60g) celery, finely diced
- 1/4 cup (40g) red onion, minced
- 1/4 cup (15g) fresh dill, finely chopped
- 1 cup (230g) mayonnaise
- 1/4 cup (60ml) fresh lemon juice
- 2 tbsp (30g) Dijon mustard
- 1 tsp (5g) Old Bay seasoning
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Add the 16 oz pasta and cook for 1-2 minutes less than the package directions to ensure it remains firm (al dente).
- Drain the pasta in a colander and rinse immediately under cold water until completely chilled to stop the cooking process.
- In a medium bowl, whisk together the 1 cup mayonnaise, 1/4 cup lemon juice, 2 tbsp Dijon mustard, and 1 tsp Old Bay seasoning until the mixture is smooth.
- Stir the 1/4 cup chopped dill, 1/2 tsp salt, and 1/4 tsp black pepper into the dressing.
- Place the chilled pasta, 1/2 cup diced celery, and 1/4 cup minced red onion into a large mixing bowl.
- Pour the dressing over the pasta mixture and toss until every spiral is coated.
- Add the 1 lb shrimp and 8 oz lump crabmeat; using a rubber spatula, gently fold the seafood into the pasta until evenly distributed.
- Cover and refrigerate in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
