Ingredients:
- 1/2 cup (75g) peeled garlic cloves
- 1 tsp (6g) fine sea salt
- 3/4 cup (180ml) neutral oil
- 1/4 cup (60ml) fresh lemon juice
- 2 tbsp (30ml) ice-cold water
Instructions:
- Combine the peeled garlic and salt in the food processor. Pulse until the garlic is finely minced, then process continuously for 1–2 minutes until it forms a smooth, thick paste.
- While the processor is running on medium-high, begin adding the oil one drop at a time. Once the mixture begins to thicken, increase the flow to a very thin, steady stream until the sauce becomes a pale, fluffy cream.
- Pour in the lemon juice in a slow-stream fashion while the processor continues to run.
- Whisk in the ice-cold water to brighten the color and adjust the viscosity.
