Ingredients:
- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup half-and-half
- 1/4 cup grated Parmesan cheese
- 1 tsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
- Wash the green beans and trim the stem ends. Pat them completely dry with a paper towel to ensure they sear rather than steam.
- Heat the olive oil and butter in a 12-inch skillet over medium-high heat. Add the beans and sauté for 5-7 minutes until bright green with slight browned edges.
- Stir in the minced garlic and cook for 60 seconds until fragrant.
- Lower the heat to medium-low. Pour in the half-and-half and bring to a gentle simmer.
- Stir in the Parmesan cheese, salt, and pepper, stirring constantly for 2 minutes until the sauce thickens and coats the beans.
- Remove from heat and stir in the lemon juice and chopped parsley.
