Ingredients:
- 2 cups (300g) fresh pineapple, diced
- 1 cup (150g) seedless red grapes, halved
- 1 cup (150g) firm apples, diced
- 1 cup (150g) fresh strawberries, quartered
- 1 cup (150g) mandarin orange segments, drained
- 1/2 cup (75g) blueberries
- 1 can (14 oz / 397g) sweetened condensed milk
- 2 cups (450ml) whipped topping, thawed
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) vanilla extract
Instructions:
- Rinse all fresh fruit thoroughly. Place the diced pineapple, mandarin oranges, and any canned components in a fine-mesh strainer for at least 10 minutes, then pat the fruit dry with paper towels to remove excess surface moisture.
- In a large mixing bowl, combine the sweetened condensed milk, lemon juice, and vanilla extract. Whisk until smooth.
- Gently fold in the whipped topping using a rubber spatula until the mixture is a uniform, pale cream color with no visible streaks.
- Using a slow, sweeping motion, fold the dried fruit mixture into the dressing until evenly coated, avoiding over-mixing.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the dressing to set.
