Ingredients:

  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 4 oz (113g) cream cheese, softened to room temperature
  • 1/2 cup (60g) confectioners' sugar
  • 1 tsp (5ml) vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1 cup (110g) finely chopped toasted pecans
  • 1 cup (120g) confectioners' sugar, sifted

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the softened butter, cream cheese, and 1/2 cup of confectioners' sugar until the mixture is lightened and creamy.
  3. Stir in the vanilla extract until fully incorporated.
  4. Gradually add the all-purpose flour, mixing on low speed until just combined.
  5. Fold in the toasted pecans by hand using a spatula to ensure the nuts are evenly distributed without overworking the dough.
  6. Scoop about 1 tablespoon of dough and roll it between your palms into a 1-inch ball.
  7. Place on a parchment-lined baking sheet about 2 inches apart.
  8. Bake for 12–15 minutes until the cookies look set and matte on top, but not browned.
  9. Allow cookies to cool on the pan for 5 minutes.
  10. While still warm, roll each cookie in the sifted sugar.
  11. Let them cool completely on a wire rack, then roll them a second time for a thick, white appearance.
