Ingredients:

  • 4 cups (600g) fresh corn kernels
  • 2 cups (300g) cherry tomatoes, quartered
  • 1/2 cup (75g) red onion, finely diced
  • 1/2 cup (15g) fresh cilantro or basil, chopped
  • 1/2 cup (75g) feta cheese, crumbled
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (15ml) red wine vinegar
  • 1 tsp (5ml) honey
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Cut the corn kernels off the cob, ensuring you don't cut too deep into the woody core. Quarter the cherry tomatoes and finely dice the red onion. Combine all three in a large mixing bowl.
  2. In a small mason jar or whisking bowl, combine the olive oil, lime juice, red wine vinegar, honey, salt, and pepper. Shake or whisk vigorously until the dressing is emulsified, thickened, and glossy.
  3. Pour the dressing over the vegetables in the large bowl. Add the chopped herbs and crumbled feta cheese, then gently fold the ingredients together until evenly coated.
