Ingredients:

  • 2.25 cups (280g) all-purpose flour
  • 0.75 cup (170g) unsalted butter, softened
  • 0.75 cup (150g) packed brown sugar
  • 0.5 cup (100g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 1 tbsp (6g) ground cinnamon
  • 1 tsp (2g) ground ginger
  • 0.5 tsp (1g) ground cloves
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 0.25 cup (50g) granulated sugar (for coating)
  • 1 tbsp (3g) ground cinnamon (for coating)

Instructions:

  1. Beat the softened butter with the brown and granulated sugars until pale and fluffy (about 2-3 minutes).
  2. Add the egg and beat on medium speed until fully combined and smooth.
  3. In a separate bowl, whisk together the flour, cinnamon, ginger, cloves, baking soda, and salt.
  4. Gradually add the dry mixture to the creamed butter; mix on low speed just until no streaks of flour remain.
  5. Combine the coating sugar and cinnamon in a small bowl.
  6. Scoop about 2 tablespoons of dough and roll into a ball between your palms (aim for about 30g per ball).
  7. Roll each ball generously in the cinnamon sugar mixture, ensuring they are evenly coated on all sides.
  8. Place balls 2 inches apart on parchment lined baking sheets.
  9. Bake for 12 minutes until the edges are set but the centers still look slightly soft.
