Ingredients:
- 2.25 cups (280g) all-purpose flour
- 0.75 cup (170g) unsalted butter, softened
- 0.75 cup (150g) packed brown sugar
- 0.5 cup (100g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- 0.5 tsp (1g) ground cloves
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 0.25 cup (50g) granulated sugar (for coating)
- 1 tbsp (3g) ground cinnamon (for coating)
Instructions:
- Beat the softened butter with the brown and granulated sugars until pale and fluffy (about 2-3 minutes).
- Add the egg and beat on medium speed until fully combined and smooth.
- In a separate bowl, whisk together the flour, cinnamon, ginger, cloves, baking soda, and salt.
- Gradually add the dry mixture to the creamed butter; mix on low speed just until no streaks of flour remain.
- Combine the coating sugar and cinnamon in a small bowl.
- Scoop about 2 tablespoons of dough and roll into a ball between your palms (aim for about 30g per ball).
- Roll each ball generously in the cinnamon sugar mixture, ensuring they are evenly coated on all sides.
- Place balls 2 inches apart on parchment lined baking sheets.
- Bake for 12 minutes until the edges are set but the centers still look slightly soft.
