Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar, packed
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) whole wheat flour
- 1 1/2 cups (180g) finely crushed graham crackers
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) baking soda
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1.5g) salt
- 1 tbsp (8g) cornstarch
- 2 tbsp (25g) melted butter
- 2 tbsp (16g) coconut sugar
- 1 tsp (5g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar using a hand mixer on medium speed for about 2 minutes until pale and fluffy.
- Beat in the egg and vanilla extract until the mixture is fully emulsified and smooth.
- In a separate bowl, whisk together the whole wheat flour, graham cracker crumbs, cinnamon, baking soda, baking powder, salt, and cornstarch.
- Gradually add the dry mixture to the wet ingredients on low speed, mixing only until no streaks of flour remain.
- Scoop 1.5 tablespoon-sized portions of dough and roll them into smooth balls.
- Melt 2 tbsp of butter in a small pan and stir in the coconut sugar and cinnamon to create a coating paste.
- Roll each dough ball in the cinnamon-sugar mixture until evenly coated.
- Place balls on the baking sheet 2 inches apart and press down slightly with the palm of your hand.
- Bake for 9–11 minutes, then remove from the oven and transfer to a wire cooling rack.
