Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar, packed
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (120g) whole wheat flour
  • 1 1/2 cups (180g) finely crushed graham crackers
  • 1 tsp (5g) ground cinnamon
  • 1/2 tsp (2g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 tbsp (8g) cornstarch
  • 2 tbsp (25g) melted butter
  • 2 tbsp (16g) coconut sugar
  • 1 tsp (5g) ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar using a hand mixer on medium speed for about 2 minutes until pale and fluffy.
  3. Beat in the egg and vanilla extract until the mixture is fully emulsified and smooth.
  4. In a separate bowl, whisk together the whole wheat flour, graham cracker crumbs, cinnamon, baking soda, baking powder, salt, and cornstarch.
  5. Gradually add the dry mixture to the wet ingredients on low speed, mixing only until no streaks of flour remain.
  6. Scoop 1.5 tablespoon-sized portions of dough and roll them into smooth balls.
  7. Melt 2 tbsp of butter in a small pan and stir in the coconut sugar and cinnamon to create a coating paste.
  8. Roll each dough ball in the cinnamon-sugar mixture until evenly coated.
  9. Place balls on the baking sheet 2 inches apart and press down slightly with the palm of your hand.
  10. Bake for 9–11 minutes, then remove from the oven and transfer to a wire cooling rack.
