Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated white sugar
- 1/2 cup (100g) packed brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 2 tsp (6g) ground cinnamon
- 1 tsp (4g) baking powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 1 tbsp (6g) ground cinnamon
Instructions:
- Cream together the softened butter, white sugar, and brown sugar until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully combined and smooth.
- Sift together the flour, cinnamon, baking powder, and salt. Gradually stir the dry mixture into the wet ingredients on low speed, stopping as soon as no streaks of flour remain.
- Wrap the dough in plastic and refrigerate for 1 hour to firm up.
- Scoop tablespoon-sized portions of the chilled dough and roll them into balls. Roll each ball in the mixture of 1/4 cup granulated sugar and 1 tbsp ground cinnamon until heavily coated.
- Place balls on a parchment-lined sheet 2 inches apart. Bake at 350°F (175°C) for 8-10 minutes until edges are set and slightly golden, but centers remain slightly soft.
