Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated white sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 2 tsp (6g) ground cinnamon
  • 1 tsp (4g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp (6g) ground cinnamon

Instructions:

  1. Cream together the softened butter, white sugar, and brown sugar until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully combined and smooth.
  2. Sift together the flour, cinnamon, baking powder, and salt. Gradually stir the dry mixture into the wet ingredients on low speed, stopping as soon as no streaks of flour remain.
  3. Wrap the dough in plastic and refrigerate for 1 hour to firm up.
  4. Scoop tablespoon-sized portions of the chilled dough and roll them into balls. Roll each ball in the mixture of 1/4 cup granulated sugar and 1 tbsp ground cinnamon until heavily coated.
  5. Place balls on a parchment-lined sheet 2 inches apart. Bake at 350°F (175°C) for 8-10 minutes until edges are set and slightly golden, but centers remain slightly soft.
