Ingredients:
- 4 cups (480g) powdered sugar, sifted
- 2 tbsp (15g) meringue powder
- 4-6 tbsp (60-90ml) warm water
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.25g) salt
- Gel food coloring (Red, Green, Gold)
Instructions:
- In a large mixing bowl, combine the sifted powdered sugar, meringue powder, and salt. Use an electric mixer on low speed for 30 seconds to aerate the mixture.
- Add the vanilla extract and 4 tablespoons of warm water. Increase mixer speed to medium and beat for 2–3 minutes until the icing reaches a glossy, 'slow-ribbon' consistency. Add additional water one tablespoon at a time if the icing is too stiff.
- Divide the icing into small bowls. Stir in a tiny amount of gel food coloring to each bowl by hand until the color is uniform and vibrant.
- Pipe the icing onto completely cooled cookies. Allow the cookies to sit undisturbed at room temperature for 6 to 12 hours until the surface is matte and hard to the touch.
