Ingredients:

  • 4 cups (480g) powdered sugar, sifted
  • 2 tbsp (15g) meringue powder
  • 4-6 tbsp (60-90ml) warm water
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.25g) salt
  • Gel food coloring (Red, Green, Gold)

Instructions:

  1. In a large mixing bowl, combine the sifted powdered sugar, meringue powder, and salt. Use an electric mixer on low speed for 30 seconds to aerate the mixture.
  2. Add the vanilla extract and 4 tablespoons of warm water. Increase mixer speed to medium and beat for 2–3 minutes until the icing reaches a glossy, 'slow-ribbon' consistency. Add additional water one tablespoon at a time if the icing is too stiff.
  3. Divide the icing into small bowls. Stir in a tiny amount of gel food coloring to each bowl by hand until the color is uniform and vibrant.
  4. Pipe the icing onto completely cooled cookies. Allow the cookies to sit undisturbed at room temperature for 6 to 12 hours until the surface is matte and hard to the touch.
